I have never cooked a Thanksgiving dinner before, but this year we are going to have a Thanksgiving dinner for friends that can’t go home so I need to start thinking about the menu. Besides the traditional Thanksgiving food I want to include some of my own recipes and food from other countries because I’ll have friends from all over the world. I started experimenting last night and I came up with this mashed pumpkin side dish. I thought it was pretty good, but Jon didn’t have any because he said he is getting tired of pumpkin, like such thing could be possible! Take a look at the recipe and tell me what you think.
Mashed pumpkin
The ingredients:
- 4 cups roasted pumpkin
- 1/2 stick butter
- 3 garlic cloves, minced
- 1 cup milk
- 1 tsp powder pepper
- 1 tsp fresh basil
- 1 tsp fresh rosemary
- 1 tsp fresh sage
- 1 tsp oregano
- ground cinnamon
- salt and pepper to taste
The how-to:
- Melt butter in a medium size pot over medium heat. Saute garlic and add pumpkin.
- Mash pumpkin when it starts to warm up.
- Mix in milk and spices and bring to a boil stirring constantly
- Reduce heat to low, season and simmer for 5 minutes, keep stirring.
- Serve as a side dish.
I am using the last of my garden herbs and I added the powder pepper just to give it a little bit of a kick. I really liked this, but I am opened to suggestions. What about mixing some potatoes? Or using other kinds of ingredients?

This reminds me of the mashed pumpkin I would have at home, very different in flavors. but similar in the simplicity of it. My mom would steam the pumpkins soft and used mustard oil, cilantro, hot green peppers and finally fire burnt dry red chillies – this one added the ultimate flavor and spice to the tender pumpkin. Don't know why I do not post these recipes.

With a dish like this, you could take the flavors in all kinds of directions! The sage and rosemary sound delicious here.

The photos are gorgeous with the background of the leaves. A comfort for this rainy day I've here. I always like to add paprika for some color and a hint of extra sweetness.

This mashed pumpkin sounds good! I like to a a touch of maple syrup to mashed pumpkin.

Great idea to make pumpkin mash, if you ask me what do I think, I would choose just using rosemary or sage but not both as they are both strong. I may add a little curry powder to the mash.

I think only you can make pumpkin look so pretty. I need to mash up some pumpkin soon. I have all kinds of ideas for it.

Call me goofy but I prefer non-traditional food on Thanksgiving and mom is forced to make Romanian dishes instead of turkey.
We gutted about 4 pie pumpkins last week and besides having a ton of seeds we have about 8 cups of pumpkin the needs a use. Love this idea!!!
