One of the items that intrigued more people at the Foodbuzz Taco Party last weekend was the guacamole. Some of the guests had had my regular guacamole before, but when they tried this one they couldn’t identify what gave it the sweet kick. This “sweet kick” was delivered by my favorite fruit ever, mango. Gucamole is one of the most delicious Mexican salsas, but when you add mango it takes it to a whole new level of tastiness. I tried this guacamole for the first time with chicken last year. It can be eaten as a snack with tortilla chips, in quesadillas, flautas (like the ones in the pictures) or over tacos like some of my guests did las weekend. Like my friend Nate said, it melts in your mouth.
And speaking of mangos, did you know that June is Mango month? Here’s the information I received from the National Mango Board. I hope you all find it informative and helpful:Mango guacamole
The ingredients:
- 2 large avocados
- 1 mango
- 1/2 red onion, chopped
- handful of cilantro, chopped
- 1 jalapeno pepper, seeded and chopped
- 1 lime, juiced
- salt and pepper to taste
The how-to:
Print this recipe
- Cut avocados and mango and put them in a bowl.
- Smash with a fork and add the rest of the ingredients.
- Mix well until they form a smooth salsa.
- Enjoy!
Looking for one more reason to celebrate summer time? Look no further, because June is Mango Month! Head to your local market and you’ll find a wide variety of fresh, ripe mangos ready to be eaten fresh or put into your favorite dish. The National Mango Board teamed up with Ingrid Hoffmann to create several recipes to commemorate this special time of year, including Chicken Wings with Mango-Chili Sauce, Mahi Mango Tostadas (hi-res image available) and a Mango Cardamom Granita.
Also, don’t forget that there are still 29 days left for the kids in your life to enter the second annual Rising Mango Star Video Contest! Kids ages 8-14 are invited to create an original recipe featuring fresh mangos, create a seven minute video demonstrating how to make their mango marvel, upload it on YouTube.com and submit their entry on www.mango.org/risingstar. Hurry though, the contest closes on June 30th, when the three finalists will be selected to travel to Hollywood, CA to compete for the grand prize of $500 and the title of 2009 Rising Mango Star at California School of Culinary Arts, Le Cordon Bleu Program, Pasadena | Hollywood.

The title of this post certainly enticed me to read more. I think with adding the mango you needed the counterbalance of the jalapeno and I like the idea of the flautas.

Hi Ben, I am totally in for this! I want to try this for sure. Do you use green skin or yellow skin mango. I find the yellow skin from Thailand are usually better tasted but not so easy to find to Europe sometimes.

I love guacamole and I’m pretty much a purist, but my husband adores mangoes so I think I’ll have to give it a try.
