There are some food events that I look forward to every month, even if I don’t participate in them every month. One of them is The Royal Foodie Joust started by my friend Jenn at the Left-Over Queen Forum. Every month the winner of the previous month chooses 3 ingredients that participants have to use to create a dish. It is amazing all the entries people come up with.
Last monht’s winners were Peter and his Wife Christey of FotoCuisine, a beautiful blog btw. They didn’t choose three ingredients. Instead they chose 3 colors that in my opinion are the greatest colors in food: red, green and white. Those are the flag colors of the two countries which cuisines are my favorite, Mexico and Italy. They are colors of fresh ingredients and delicious flavors. I thought for a long time what I wanted to create, but finally I decided to go back to the basics.
I made pork enchiladas verdes and rojas (green, made with tomatillos and jalapenos and red, made with tomatoes and chile de arbol) and served them in the same plate with sour cream. For the first batch I used crepes and for the second corn tortillas. Those ingredients are staples in my kitchen. If you have been following this blog for a while you already know that and if not, just take a look at the food I have posted during the past two years. Enchiladas will always be a winner dish in my book.
I want to apologize for the pictures. I have a new wireless flash that for some reason didn’t want to sync with my camera and other flash. It took me several minutes and shots to get it to work and in the mean time my enchiladas went dry
But at the end the lighting kind of worked, right?
¡Buen provecho!

Nicely done I just joined up but want to check out the competition before I enter a dish.
Also, great Cinco De Mayo meal too.
I think the lighting came together nicely. I just started taking photography seriously (thanks to an expensive camera purchase) and now find myself actually caring about this stuff. cry cry cry Although I got smart and eat first and then shoot with what would be my leftovers for the next day.

I agree, Mexico and Italy are my favorites too! I just love enchiladas but have never made them with pork. You have inspired me to put these on my “to cook” list. I made some with chicken and green chilies last night. I thought about entering them but lack the nerve to do so. Good luck!

Ben I don’t understand why you say the photos aren’t good, are excellent! The same with the enchiladas, sometimes I made them with chicken…really a buen provecho con ellas
All the best!

So my eagle looks like a guajolote? You turkey!
But, you’re probably right. It was done free-hand. Maybe if I had your photoshop skills it would have looked better. :p BUT, I think your enchiladas rock. So does your photo. Besos y abrazos.

The pictures look beautiful to me Ben, so I shouldn’t worry about it! I do try and setup my lighting before I actually finish the food, so maybe a tip for next time?

My oldest recipe, from back when I was 13, was for cheese enchiladas. That was almost 30 years ago, and I’m still refining and playing with them. I think the crepe idea is brilliant, and I love a salsa verde. What a great entry and don’t worry about the photography — I can’t count the number of meals Christey and I have eaten dry and cold because of shooting it…it’s all part of the process

Everything looks great Ben! I love the enchiladas – they look great. I so agree with you about the freshness of the foods of Mexico and Italy – you really exemplified those fresh flavors here with this amazing dish! I would love to dig in right now! Best of luck in the Joust, Ben, you know we are always glad for your entries!

Very vibrant photos. I wonder if a foodie picked the colors for the Mexican and Italian flags
