
Maybe you have noticed that most of the dinners I prepared are not too complicated. That’s because I try not to make dinner the biggest meal of the day (that would be breakfast right after my workout) and because I cook at least 2 meals almost everyday. As much as I love cooking I don’t want to spend all day in the kitchen. That’s why I am always in the lookout for easy and quick dinners.
This recipe is a very good example of this. I spent only about 10 minutes making the peanut butter bbq sauce. After that the chicken marinated for 5 hours in the fridge and baked for one hour while I did the things that I do when I am not cooking. That’s just the way I like my dinners.
Peanut butter bbq chicken
Makes 3 big servingsThe ingredients:
- 3 chicken legs (drumsticks and thigs)
- 4 TBSP peanut butter (the kinda that hasn’t been recalled, just to be safe)
- 1/2 cup vinegar
- 1 to 2 TBSP hot sauce (Tabasco or similar)
- 2 TBSP brown sugar
- salt and pepper to taste
- other spices as desired
The how-to:
- In a small sauce pot mix peanut butter, vinegar, hot sauce and brown sugar and heat over medium-high heat. Stirr constantly until the sauce starts to thicken.
- Rub chicken with salt, pepper and spices and put in a large container. Pour peanut butter sauce over it and spread evenly all around. Refrigerate for at least 2 hours. Overnight works better.
- Put chicken in a baking dish, cover with foil and bake at 250°F (120°C) for approximately one hour.
- When cooked let it rest for 10 minutes before serving and enjoy!

- I don’t think there is anything I would change on this recipe. It is easy. It uses a very few ingredients available in almost every kitchen and it is very tasty. Just add more hot sauce if you’d like it hotter.

You got me curious when I saw peanut butter in this recipe. I have to say that this looks quick and yummy.

For some reason, we were actually expecting to see bbq sauce in this recipe with peanut butter as a slight flavor enhancer. Looks like pb is the main star! Love that it’s an entire chicken leg. Yummm chicken!

I hear you on the quick dinners there! But sometimes I do like spending extra time in the kitchen. I like the sound of this dish and will be giving it a go this weekend – maybe with couscous or bulghur!

This looks intriguing. Maybe my kids will like it better than the peanut butter noodles recipe I posted today, which they disdained even though my husband and I really liked it!

Ben. what an exciting way to flavor BBQ. Never even occured to me to add PB. I bet the taste was fantastic. I like PB, can you tell? You are so right about not allowing your passion of cooking or baking to become a chore. Once it does, it stops being a passion. Good for you. That’s exactly how I see it. Same thing with the blogging.

I need to get in the habit of eating bigger breakfasts and smaller dinners. I guess you can train yourself to be hungrier in the morning than at night. I like the peanut butter chicken. I don’t recall seeing you post peanut butter recipes before.

Seems we have the same approach to dinner. I prefer a lighter meal in the evening too and this one is perfect for that! It’s one of the reasons I love Thai or Asian satay too—flavorful sauces, a bit of protein and some vegetables do just fine in my kitchen.

this looks interesting andi’m sure it worked well together – flavor-wise. i could also see putting in a dab of red curry paste instead of the hot sauce. delicioso!
