
According to Jon (who is a weather fanatic) this January has been one of the coldest since people started recording that kind of stuff more than a hundred years ago. I think we were over the freezing point (32°F or 0°C) only a couple of days the whole month and today we are at only 7°F (-13°C) right now. That is cold!
That’s why I have been making a lot of soups lately and blogging about them. Here’s another one I just prepared using four different root vegetables: onions, carrots, beets and potatoes. The preparation is similar to the other soups I have posted here. I boiled the vegetables in chicken broth until tender, blended and seasoned the soup.
I love the color of this soup. The beets, even though I only used 2 small ones, were the stars in this soup. They gave it its beautiful red color and sweet taste that mixed perfectly with the other root vegetables. Now if you excuse me, I think I am going to have some soup for breakfast before I head back under the blankets. It is just way too cold to do anything this weekend

Hi Ben,
Lovely and delicious! I’m a fan of beetroot and love the unique color stained my hands and mouth LOL… Is there any tips on how to keep the Beetroot’s Red color without turning to brown?Firstly, I prefer not to have any sourish beetroot with lemon or vinegar unless I want to pickle it
I love the natural taste of Beetroot and I don’t want to spoilt the sweet taste. Btw, is that Beetroot Chips by the side of the bowl? How to make it if using the oven because I don’t have a dehydrator (not sure if I can find one locally.)

Beets make for such a beautiful colour in soup! The weather you’ve been getting is about normal around here for this time of year. I see -13 and I think, “ok….I won’t wear long johns today”.
