
It seems like I am finally done with the reconstruction of this blog. I love doing this because I learn so much everytime. What do you guys think of the new colors and layout? Let me know I like to hear your impressions because my readers are one big reason this blog is alive.
I’ve had so much stuff to do these last couple of weeks that I haven’t cooked much. Something that I made, however, was guava and cinnamon mini empanadas for a party we went to last week. I had never made guava empanadas before, but they are now my favorite kind.
I have posted other puff pastry empanada recipes before. Here you can find the recipe for the puff pastry I prepare and here you can see some pictures on how I put them together. For the guava jam all you need is:
Guava and cinnamon filling
Ingredients:
- 1 lb fresh guavas cut in quarters (guava seeds are edible, but if you don’t want the crunchiness they add just clean out the seeds before boiling)
- 2 sticks cinnamon
- 1 cup sugar
- 2 TBSP water
Preparation:
- In a medium pot boil all the ingredients for 10 minutes over medium heat. Reduce heat to low and cook for 10 more minutes stirring constantly. Refrigerate for at least 2 hours before using.

I so prefer these to traditional sugar cookies. And, kudos to you, making your own guava paste and shells. I take the short cut with both! The blog looks good…though I kind of miss the pumpkin color.

This seems like a great recipe, fruit is so versatile that we can always add it to sweet or savoury foods. Will have to give these a go, thanks for inventing this recipe.

I like this look very much. I like the new colours better.
I didn’t know empanadas could be filled with guavas. These guavas are ripe, I think these are white inside?

These are a great idea! I love the flavor of guava, and this will be a great way incorporate it into the season. Might have to go with storebought jam if I can’t get lucky finding the fruit, but I’m sure that’s an easy workaround. Great recipe!

I like the new site layout (and am glad you’re back up and running!).
As for the empanadas, I finally had my first ones while I was traveling this past month, and combined with this post (they look awesome), I am now resolved: I must make empanadas soon. I really like the thought of guava filling!

We tried guava jelly for the first time a few years ago and have been on a mad search for all things guava ever since! This recipe looks delicious!
