It seems like I am finally catching up with things so very quickly, here are the winners for I love baking from September and October and the two first courses I served at my 24,24,24 party a couple of weeks ago Let’s start with the food:
The first course was black bean salsa in mini tortilla cups:

Remember this pinto bean salsa recipe? I used the same one just with a few changes. I used black beans instead of pinto beans, of course, and red onion instead of white. And when I cooked the beans I added 3 cloves to the pot (this is actually a tip I got from my friend Bren. If you haven’t visited her blog you are missing out big time) and a little bit of epazote 5 minutes before I turned the heat off. That gave the bean salsa a lot of flavor.
The second course was classic guacamole in mini tortilla cups:

I usually add tomato to my guacamole, but I wanted to make this only with avocados. I don’t know if that is more “original” or not, but the buttery texture and flavor of an only-avocados guacamole was what I was looking for here. Guacamole is not difficult to make.
