Maybe you noticed that a couple of days ago the blog-o-sphere was flooded with pizza recipes. If you are from a distant planet and you weren’t aware, the Daring Bakers challenge for this month was to make pizza like a real pizzaoilo. But we Daring Bakers love to take the challenges to the next level. We are always experimenting and creating new things. Yes, we love to play with our food.
You might think that after reading hundreds of posts about pizza you would be tired of it and see nothing new. WRONG! One of the last posts that I read that night was my good friend Jerry’s (it took him all day to write that post and with good reason) and he made me hungry for breakfast at 11 pm with his creation: Sausage and Gravy Breakfast Calzone.
The very next morning I used the dough I had left from the pizza I had just made to make a breakfast calzone. I didn’t use the same ingredients that Jerry did, but the idea of a calzone for breakfast was just too good to let go. In honor of the Daring Bakers and Jerry ingenuity I created this Egg, Broccoli, Potato and Cheese Breakfast Calzone:
I won’t include a recipe for this one because there is really not much to it. You just have to have some pizza dough (I used my whole-wheat recipe that we love), boil some potatoes, make scrambled eggs with broccoli and bake it for about 20 minutes at 375°F.

I am sending this entry to Frugal Fridays, I know we are supposed to post dinners, but we can also have great breakfasts without spending a lot of money, right?

Love the idea of breakfast calzones Ben…wish someone could rustle up some for me! You’ve done frugally great here amigo…I’m now in the mood for making calzones for lunch. Am off to check out the whole wheat dough! Hope it doesnt need a night’s rest, coz I dont have the luxury of time.

Yeah – made them and WOW were they good! Of course, mine didn’t look near as pretty as your picture.
