Turkey albondigas in Tomatillo Sauce

Where does time go? It seems like I just posted my first recipe for Jerry’s event Frugal Fridays and it is time to post again. Now it comes the difficult decision, what to post…

I made these albondigas (meatballs) several weeks ago and I know they are perfect for this event. I made them right before I went away and I didn’t write down how I made them, but I am 95% sure that the real cost was at or around $10 dollars. Probably the most expensive ingredient was the ground turkey tube at around $2 at Kroger’s. Tomatillos are kind of expensive in this part of the world, too. But I don’t think they are more than $2 a pound. Taking that in consideration I have $6 left for the rest of the ingredients: rice, one jalapeno pepper, 2 eggs, one adobado pepper, 1 can of corn kernels and my spices. It sounds just about right. Unfortunately I don’t remember exactly how I made these meatballs. Here is what I remember:

In a large bowl combine one pound of ground turkey, one deveined and minced jalapeno pepper, 2 eggs, salt, ground pepper and 2 TBSP chopped parsley (or was that cilantro?). Make 2″ meatballs and place them on a greased baking sheet. Bake for 20 minutes at 325ºF.

In a large pot, cook 1 pound of diced tomatillos with one adobado pepper, 1 tsp oregano, salt and pepper to taste over medium heat. Add 1 cup of chicken or vegetable broth after 10 minutes. When the meatballs come out of the oven add them to the tomatillo salsa and cook for 10 more minutes. Serve over white rice with corn kernels or Mexican rice.

    Hi Ben. Thanks for stopping by my site. I’m sure you grew up with Mexican chocolate just like I did. It’s part of the culture that stays with us always. The albodigas look superb. I’ve made albodiga soup, but I will have to try this recipe. I grew up with what we call fugal foods. And they’re still a staple in my house. You can take the girl out of the barrio…etc, etc,etc Thanks for sharing.
