Spicy Tequila Sauce

Who doesn’t like noodles? Pasta is one of those foods that is eaten everywhere in the world in many different ways. I like pasta so much that I am even thinking about making my own from now on. But what is pasta without a good sauce? I believe that the sauce has to be in perfect harmony with the carb rich pasta to create a delicious dish. I don’t think that is very difficult to accomplish, though. I have experimented with different pasta sauces and although I don’t get perfection every time I always get delicious and new combinations.

That’s why I decided (again) to combine my two favorite cuisines for a lunch last week and this spicy tequila “Alfredo” sauce was born. The amounts I used for this sauce made enough for three or four regular servings. This are the ingredients I used for the sauce:

  • 1/4 cup butter
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • 1/4 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 TBSP paprika
  • 1 tsp crushed red pepper
  • 1 tsp garlic powder
  • salt and pepper
  • 1/2 cup tequila (you can use less, I just love tequila)
  • 4 asparagus, cut and steamed
  • 1 cup broccoli, cut and steamed

Making Alfredo sauce is fairly easy and this sauce was very simple, too. Just melt butter and sour cream in a large saucepan. Add heavy cream and spices and stir well to mix the ingredients. If you want a strong tequila flavor add it just a couple of minutes before you turn the heat off or sooner if you want a milder taste. Reduce heat to low and add cheeses. Turn heat off and add veggies stirring constantly until chesses completely melt. Serve over pasta al dente and enjoy!

    Interesting combination again Ben…was the tequila subtle or did you add it in last minute? I must admit I love alfredo sauce but definitely in moderation these days.
