Tropical tuna salad

Who said salad had to be boring? For a long time I have been dealing with this dilemma. Every time I think of salad I think of something bland and boring that it’s put on the side just to remind us we need to eat more healthy food. Until now. After this taco salad I wonder why we have to look at salads that way. They are part of our food and I should be paying more attention to them. That’s why yesterday I took out of the fridge some greens (fresh spinach and romaine lettuce), a cantaloupe that was just right and a couple of oranges. I mixed some pasta, a couple of cans of tuna, pepper, salt and mayonnaise and put it all together in this “tropical” tuna salad for lunch.

I wanted to use some mango to make it more tropical, but the mango that is sitting on my counter was not riped yet. The flavors blended perfectly, so I say, especially the tuna and the oranges. Even Lucy (my kitty) got to taste some of the leftover tuna. It was a good day for all of us. The salad wasn’t very filling, but that was just what I needed to get through the rest of my day before dinner and it was good for my diet. Did I mention I need to lose at least 10 pounds? How do you make your salads more exciting?

    This looks so good! My typical salads are dressed with lemon juice and powdered chili. I wonder how chili would taste mixed with mayo and pasta?
