The temperatures are finally starting to rise in this part of the world. Although it rained this morning, we had a sunny and lovely afternoon/evening. We finally reached the 60s! I love cold, gray and snowy days, but after a long winter I am ready for warmer weather. Spring makes me feel full of life and good energy. I want to go out, walk, swim and get rid of the extra pounds I accumulated during the winter. And I am going to start that by cooking more healthy food (although the great Daring Bakers challenges are not much help, see previous post) I’ve seen all over the blog-o-sphere delicious salmon recipes pop up (just take a look at Courtney’s delicious banana steamed salmon) so I picked up a delicious looking salmon fillet last time I was at the grocery store. Now the question was how to make it. After awhile I decided to make a honey-pasilla pepper sauce and bake the salmon and some vegetables in it. The result was the photo above. Honey pasilla baked salmon with vegetables Printable version Makes 2 servings Prep time: 10 minutes Cooking time: 25-30 minutes Method: Baking For this recipe you will need:
- 1 1-lb salmon fillet
- 2-3 pasilla chiles, deveind
- 2 TBSP honey
- 1/2 tsp cumin
- 1 lime
- 1 Roma tomato
- 1 garlic clove
- granola for crunchiness
- 1 red bell pepper, sliced
- 1/2 white onion, sliced
- 2 carrots, peeled and sliced
- salt and pepper

Preparation:
- Preheat oven to 350° F.
- Put the salmon in a baking dish and season.
- Submerge the pasilla chiles in boiling water for one minute until they soften.
- Blend pasilla chiles with the juice of one lime, cumin, tomato, garlic, honey, a pinch of salt and just a little bit of the boiling water (2-3 TBSP)
- Brush some of the sauce on the fillet. Top with some plain granola for crunchiness.
- Add vegetables to the baking dish and the rest of the sauce.
- Bake for 25-30 minutes.

About this recipe:
- I liked the flavor of the honey and pasilla sauce, but next time I make this dish I will let it marinate for at least a couple of hours before baking.
- I would also add some orange juice to the baking dish. The dish was very good. I’d just like a stronger citric flavor next time.
- I was originally going to use chipotle adobado peppers, but the store was out when I was shopping and I didn’t have to time to look for them in another store. I bet the smoky flavor of the chipotle would go great in the honey sauce.
- I served the salmon over steamed rice. I think it was a perfect combination, but next time I am trying quinoa.
Any more ideas for healthy food? That scale in my bathroom has become my worst enemy :p
Buen provecho!

I’m not the biggest seafood fan (although I’m better these days..slowly!) this looks great Ben. The honey is a nice touch.

This is certainly a switch from the party cake — a fun combination of flavors and textures!
p.s. poor jon, more fish

Ben, the salmon looks wonderful. I agreee on a little citrus but may I suggest the zest of an orange? The juice might make it soggy.

I have no idea what a pasilla pepper is. Granola on salmon is something I never ever would have thought of although it does make some sense. This recipe is intriguing.

Looks good, I could eat seafood everyday!
Have you conisdered using chopped pecans or almonds instead of granola? Also, be careful about marinating fish in anything citrus for a “couple of hours” the citrus with literally cook the fish. The chipolte peppers sound like a good idea to me. Yum

Katie, thanks for the links I will be checking them out.
Courtney, I love fish, Unfortunately, I am the only one who likes it in this house so I don’t make it very often
Peter, what’s up with you people not liking fish? LOL At least you are trying
Allen, yes it is! I felt so guilty after eating a HUGE piece of cake that I decided to start my “diet” right away. HEHE. And Jon didn’t eat his portion, that’s good because there is more for me :-p
Peter, thanks for the suggestion. That is exactly what I am going to do next time. There is always something new to learn from the pros :-p
Val, I love salmon, but I don’t eat it too often. I will have to sneak it more often in my diet.
giz, just follow the links and you will learn more about dried Mexican chiles. I must confess that I was afraid when I was making this dish, but it turned out wonderful. You should try it :-p

the granola has peeked my curiosity and the dish looks great. You can pop on up here to the Detroit area anytime to visit with this dish.

I love salmon, and this sounds like a great way to serve it – and different than I’ve ever had it!

I certainly must loose some extra weight. This recipe is a good start. I would add some orange slices.

That sounds really tasty. The heat of the pepper with the honey and the oats all baked with salmon…mmm… The orange juice sounds like it would be a nice addition as well.

This looks fabulous!!
Good luck in the joust, my friend.

Moggy, you are right. A citric would cook the fish but I am not too worry about that. It could make a great ceviche! And adding nuts is a great idea!
Shayne, granola gives some of my dishes a great taste and that special crunchiness. I love to use it. And I might just visit you sometime and we could cook something delicious togeter :-p
Nuria, I know, I hate that scale not because I don’t like to work out, but because I love to eat (sometimes too much, heheeh) Besos.
cakewardrobe That’s exactly what I thought, but since I love food I need to find ways to make healthy food taste delicious. Hehe.
Jenn, thanks. I love salmon, too, but I don’t make it very often because Jon doesn’t like fish. That is sad!
Deborah, you should try it sometime. It turned out delicious!
Ivy, I think we all foodies face that weight problem, there are just so many delicious recipes out there that we “have” to try. Hehehe. Adding orange slices is a good idea.
Kevin, it was good! Sometimes I wonder why my crazy kitchen adventures taste so good. I should write a book or something. hahaha
Sues, let me know how it turns out if you try it. I’d like to see if there is anything I need to change next time.
Emiline, we should start a healthy recipe swap club or something. It will soon be warm enough to go swimming and I want to be fit again for that. LOL

Diet? Is that a French word?…English?..Spanish?… Never heard it before.
Hehe.. It looks good to me. I like how you use the pasilla chiles.

There is always room at my table, Ben

As an aside Ben congratulations on being a winner in the Royal Foodie Joust:D Can’t wait to see what the next 3 ingredients are. Let the games begin!!

My favorite fish is salmon! I love the way it looks with all the vegetables and the addition of granola is definitely interesting.
Another tip to add more flavor is to top the finished dish with grated orange/lemon/lime rind. It really gives it a burst of flavor and helps to bring everything together.

Nice seafood dish Ben, I really enjoy my visit here. I love your template as well, so dinamic

Hey Ben, great site here! I just gave you a little stumble love! I’ve had great luck with sticking with whole grains (no simple carbs) and a modified South Beach type of eating, with a day or two of cheating of course. I used a book written by the SB authors titled the “good fats good carbs guide”. Back to the recipe, our salmon dish looks gorgeous and I’ll be giving it a try with the chipoltles and brown rice!
