Poblano/avocado sauce

Some months ago I adventured into making an Avocado “Alfredo” Sauce. The result was tasty (I love avocados and I think they are tasty in anyway), but last night when I decided to make it again I wanted to give it a different kick. I looked into my fridge and found two Poblano peppers, the remaining from the Creamy Poblano Rice I made for Jerry’s blog (you didn’t hear about it? Go check it out)

Poblanos are flavorful peppers with just a little bit of heat. However, they have a thick, waxy skin and they taste better if you take it off before cooking them. For this you have to roast them. This video is very informative on how to do this.

Once your Poblanos (I used 2) are skinned and deveined, blend them with the juice of one lime, one avocado and 1/2 cup of milk. Pour the mixture in a sauce pan with 1/3 cup of butter, 1/2 cup of sour cream and 2/3 cup of Parmesan cheese. Cook only the necessary time for the ingredients to melt together and voila! you just made a delicious Poblano and avocado (Alfredo?) sauce. You might add some salt and pepper. I forgot, but the flavor of the Poblano pepper and the saltiness of the Parmesan cheese were enough.

I served this sauce on chicken, pasta and veggies that I fried together and added 1/2 cup white wine 5 minutes before turning the heat off. Italian and Mexican cuisines meet once again for a delicious dinner.

    It looks delicious. D is allergic to avocados, so my ability to use them is infrequent. I might have to try this the next time he’s out of town, though!

    Ben, if there’s one aspect of Mexican and Greek cooking that both cuisines share, it has to be roasted peppers!

    This sauce is unique and I’m intrigued….it must have tasted great!

    I never would have thought to add avacados to a cooked sauce.But I see its only for a short time. Looks so creamy!
