I don’t know if there are different ways to make huevos rancheros in different parts of Mexico, but this is how they made them at my parents’ restaurant when somebody ordered them. And since the restaurant was in D.F. (Federal District, which is the official name for Mexico City) I am comfortable calling these the D.F. version of huevos rancheros.
This is a very simple recipe and, like many Mexican dishes, the secret is in the salsa. There were two kinds of salsas available at my parent’s restaurant at all times, verde (green, made with tomatillos) and roja (red, made with tomatoes), so it could be used for all the different dishes that called for them.
Huevos rancheros is a dish of sunny side up eggs served over a couple of fried tortillas and beans (I spread refried beans on the tortillas) I also grill a thick slice of ham or turkey breast and serve it on top of the tortillas. The final touch is the fried salsa over the whole plate.
To make salsa roja you need tomatoes, cilantro, onion, garlic cloves, salt, your favorite kind of chile and oil. I usually use chipote adobado peppers for red salsas, but other fresh or dried chiles will do the trick, too. In a small pot cook tomatoes, cilantro and chiles (if using fresh or dried) in just enough water to cover them and just long enough to soften them. Then drain and blend together with the onion and garlic cloves. Fry in hot oil and add salt. Amounts will depend on how much salsa you are making and how hot you want it to be.
This dish is packed with a lot of energy for a beautiful Sunday like the one we are having here today and is easy enough to be a perfect weekend brunch.

Probably my hunkster’s favorite breakfast dish! I’ve never made it, though. He’s the one who rolls up his sleeves to do it. I think he uses corn tortillas and lots of cheese. Yours looks delicious, Ben. YUM!

With all the bastardized versions of Huevos Rancheros I have seen (and complained about) I am so happy to see a real Mexican posting their own! I plan to post one as well on my blog in the coming weeks. My family doesn’t include the ham or turkey (though I love frying up some ham to go with eggs in general) but I think it makes it a heartier, brunchier meal, like you’ve said. Yum.
