Tortilla crépe

CrépeI don’t think anybody cooks the day after Thanksgiving. I know I won’t for a couple of days. J’s mom brought us a box full of food yesterday that will last for a while. That’s why I looked through some food pictures I took last week to have something to post today.

I prepared this counterfeited crepes one night after dinner when I was craving something sweet but didn’t really want to spend much time in the kitchen. I was watching heroes that night and couldn’t afford to miss a minute. I am a big fan of the show. I had some cream cheese frosting left from my last pumpkin cake and I had to use it somehow. So I took some flour tortillas out of the fridge and some roasted pecans and chocolate syrup out of my baking cabinet and came out with this Mexican cream cheese crepe.


When I first thought about it over the first commercial break, I wasn’t sure it was going to work well. But then I realized that crepes are just a thin layer of flour, eggs, water, milk and butter and flour tortillas are made with, well, four, lard or butter and water, not too much of a difference. That was my reasoning to avoid much preparation, but it worked!

I warmed the tortillas up, filled them with the cream cheese frosting, folded them in four and topped them off with some chocolate syrup (I was out of whipped cream) Although for a moment I thought I had made a culinary breakthrough, I remembered that my mom used to give us flour tortillas with cajeta, honey and strawberry jelly when we were kids and we loved them. So I guess I didn’t invent anything new that Monday night.

If you use flour tortillas for more than fajitas and burritos I’d love to hear your ideas. Tortillas and wraps can be so versatile in the kitchen that there should be some kind of food contest that involve them. I’ll think about that one.

    Hola Ben! Don’t know how they finally tasted… but they look great!!! I’ve never tried to do creppes or tortitas, I’m not much into desserts’ cooking but I love eating them!
    I wish Heroes had started here too! I’m totally addicted to it!!!
    Our Xmas day looks like your Thanksgiving… eating and eating… I wish I was a bear to hibernate after those long meals!!!

    I am too full for any more turkey so I started my ice cream diet :)
    Nobody gets me when I tell them that my condiments stapples are cream cheese frosting, chocolate ganache and dulce de leche….crepes baby! That’s why! Looks great!

    This sounds yummy, Ben. What about frying the tortillas, adding a scoop of vanilla ice cream, sliced bananas, drizzling on some dulce de leche and chocolate, sprinkling on some toasted nuts, a squirt of whipped cream, and voila….One of our favorites. Totally yum! Of course, yours make more sense since you had the stuff and who could resist that cream cheese frosting?

    I use flour tortillas to make a thin crust pizza. I use 2 tortillas, I put mozzerella cheese between the two and then on 2nd one I put pizza sauce and my toppings. Then I bake it in the oven at 400 degrees until cheese is melted. Makes for a simple pizza and one that is not to big for one person to eat.

    They were very yummy at the end. The cream cheese frosting is good on anything, I think.
    Christmas here is also a big deal, it is time I start thinking what I am going to cook that day :/

    You are not the first one I hear go on an ice cream diet. I gotta try it myself, LOL. I love dulce de leche, too. Too many sweets, what am I gonna do?

    OMG! You really want me to gain weight, don’t you? LOL. It sounds delicious that way. And yes, I had all the ingredients and I needed to make something fast in the break commercial. I can’t afford to miss one minute of Heroes!
