A couple of nights ago I wasn’t sure what to make for dinner. I had two boneless chicken breasts and I wanted to broil them or bake them, but I needed to give them some flavor. It was then when I remembered a conversation I had with my friend Miguel Cane when he told me about this salmon he prepared with granola. That gave me an idea about what to cook for dinner that night. At first I wasn’t sure about the outcome of what I was doing but the final result was a delicious Baked Chicken Granola which recipe I share with you today.
2 Boneless and skinless chicken breasts cut in half
2 ½ Cups skim milk
1 Egg
2 Cups plain granola
1 Pinch ground clove
Italian seasoning
Salt
Ground black pepper
With a whisk mix the milk, egg, salt, ground pepper, Italian seasoning and ground clove until all the ingredients are incorporated. Marinate the chicken breasts in that mix for at least 3 hours. Marinate them overnight for best results.
Set the oven to broil or warm it up to 300° F. Cover the chicken with the granola to form a crust around it. The best way to do this is to put the granola on a flat container and the chicken breasts on top pressing them lightly against the granola and turning them over to cover both sides.
Lay the chicken breasts on a baking sheet and bake them for 20 to 25 minutes. The cooking time will depend on the thickness of the chicken so make sure to keep an eye on them to avoid overcooking them.
This dish can be served with white rice and sauteed vegetables, I used green bell peppers (the red ones are sweeter) and onions sauteed in extra virgin oil. Also, a slice of Manchego cheese can be put on top of the chicken breast as soon as they come out of the oven. That cheese is expensive (up to $19.00 USD a pound) but it is worth every penny spent on it.
This turned out to be an easy, quick, healthy and delicious meal.

Y te digo por qué…
A mi niña, la pequeña, no le gusta el pan rallado adherido al pollo o a la carne…pero adora la granola.
Lo voy a intentar incluso con carne de vaca…jajajaj mirá lo que te digo!!
Es una idea genial la que tuviste y muy acertada ya que por lo general siempre hay granola en una alacena!!

I was just eating yogurt and granola and had an epiphany about using granola in lieu of bread crumbs. I googled it to see if it existed, and happily found this entry – yay! Thank you! I’ll be trying this recipe tomorrow.
